And this shall be the priests' due from the people, from those offering a sacrifice, whether an ox or a sheep: they shall give to the priest the shoulder and the two cheeks and the stomach.

What is special about the shoulder, cheeks, and stomach of a sacrificial animal, that they should be singled out as especially belonging to the priests? As with so many other mysteries in Torah, nobody really knows.
