We have to reseason it after almost every use. Our method is less thorough than yours which might be why we struggle with rust. We heat our pot to smoke point and then add oil to the very hot surface till it won't absorb any more.
One of my mum's dishes that my wife also learned to make years ago is only done in a Dutch oven as it just has a deeper flavour than making it in a steel pot.
