We know from Jewish tradition — and from the way many languages still reflect this (like Spanish, “sábado”) — that the 7th day corresponds to Saturday.
Christians historically recognized this; many admit Sunday is the first day of the week, not the 7th, and we know from Roman and Jewish sources that Saturday was kept as Shabbat during the first-century period.
The Julian to Gregorian calendar reform didn't affect the 7-Day cycle; it only shifted the dates.
So we piece this together from Scripture, Jewish practice, linguistic clues, and historical documents. There’s a strong and reasonable chain of continuity, although we have to admit we rely on a combination of sources to connect all the links across the past 2 to 3,000 years and that there is no hard evidence going back thousands of years before that.
