What does everyone do with their sourdough starter during Passover? I threw mine away but I’m reluctant to start again only to have to throw it out just as it’s maturing!

Welcome to the club, but that is what we do in our house. We throw it out every year and start over. It has now come to a point where we can regrow it within a few weeks. How about you start a Forum topic on this and ask the community as well?
