Pita bread using the Versatile Dough

Last night I used the versatile dough and rolled it out into 4 long pitta shaped pieces. I should have rather made 8 shorter pittas as these where giant...
I baked it for 15 seconds per side in a very hot oven and then turned it over so that the bottom also got 4 turns. My countertop gas pizza oven is very hot on the flame side, so I first put the dough length ways in until it starts to puff on the flame side and after the two ends are puffed up then I put the dough in width wise so that the middle part gets some heat.
A hot skillet works just as great to make pita bread.
I left the bread to cool and then filled it with rice, piri-piri lamb/chicken sausage pieces and salad. Oh, sorry. We forgot to buy salad for the meal. ? But a donor kebab should have salad.
Garlic mayonnaise tastes great when you coat the inside of the pita with it before adding the rest of the stuffing.
