You forgot the first part of the verse... Genesis 1:5 "And Elohim called the light Day, and the darkness he called Night. And the evening and the morning were the first day." He names the day first and named the night second. It makes no sense to record the naming of the day and night in the incorrect order which means you incorrectly understand the verse.

Before light was there, it was darkness, so evening starts and then day, we all start from darkness to light
