Although God didn't explain it to us, Man might have been created on the 6th day instead of some other day for several reasons:
-So he wouldn't be left without a purpose while God created everything else.
-So we couldn't say we had some role in Creation.
-So God could immediately spend time with his favorite creature.
-So we wouldn't be proud of our primacy in Creation. We were given authority, but created last to indicate a role of servitude.

And God made the two great lights—the greater light to rule the day and the lesser light to rule the night—and the stars.
Genesis 1:16 ESV
The only lights referenced here are the sun and moon because they are the only lights that separate day from night and govern the seasons, but the stars were probably created at the same time.
Light pre-existed the sun because there was day and night before the sun was made. Was the light gathered and focused into the sun, moon, and stars just as the waters were gathered and concentrated in the seas?
