Proverbs 20:1-2 is arranged in a parallelism that illustrates how all alcohol and government are both dangerous servants and fearful masters. In the wrong context, at the wrong time, or too much of either one can do far more harm than good.

When the disciples said they didn't have time to "serve tables" in Acts 6:2, that wasn't pride. True humility includes knowing your role and who you are in relation to God and your fellow man. God knows whom he anoints. Don't blow that off even for a good cause. Delegation of tasks that aren't part of your primary role or that you aren't suited for isn't laziness or pride. It's just good sense.
Why did the Disciples choose 7 deacons instead of 5 or 10? Perhaps for the symbolism of "completion", but more likely it was to cover a 7-day rotation.
The Twelve didn't autocratically impose deacons on the other disciples. They asked for nominations and then confirmed the men put that were put forward. This isn't always appropriate, but it's the same standard Moses used when delegating authority in the wilderness.

This was why the Jews were seeking all the more to kill him, because not only was he breaking the Sabbath, but he was even calling God his own Father, making himself equal with God.
