PANCAKES!!!
This pancake recipe is for a nice stretchy pancake (almost like crepes, but normal thickness) that has a little bit of a tang.
Makes about 45 pancakes and takes about 2 hours to fry so you can make half a batch for a quick treat.
Ingredients:
¼ cup Cooking Oil
8 cups Cold Water
6 Eggs
2.5 tsp Vanilla extract
2 Tbsp Vinegar
2 tsp Salt
3 tsp Baking Powder
6 cups Flour
Cinnamon sugar sprinkling:
1 cup white sugar
2 tsp cinnamon powder
Method:
1. Mix the wet ingredients together, but only 4 cups of water at first.
2. Add the wet mix little by little to the dry ingredients while stirring.
3. Add the last 4 cups of water and mix well.
4. Important: Sift the mixture twice to remove all lumps.
5. Let the batter stand for 2 hours before frying.
6. Fry in a lightly oiled frying pan. If the pancakes stick too much then add a little bit (1 Tbsp or 2) of extra oil to the batter and mix in.
Tip:
After sprinkling and rolling the pancakes put it on a plate and cover it so that the steam can further soften the pancakes.
