The Levitical priests were sanctified for service in an eight day ceremony. 8 = new beginnings, new creatures, new role. The eighth day represents one step beyond the natural world and into the supernatural. (Remember that creation was completed in 7 days.)

Once sanctified, the Cohanim (priests) were no longer private citizens, but public resources with a responsibility to God and Nation.
